Cabin Eats

This past weekend was our annual (well, we skipped last year to save for Ireland) cabin retreat up in the mountains, snow and cold air. Last year we went to Big Bear and this year it was Lake Arrowhead. Of course, the first thing that pops into Ryan’s head is WHAT ARE WE GOING TO EAT?! Seriously. It’s like a food-fest. This year, he found a theme:

That is exactly EIGHT POUNDS of bacon. There were six of us. That meant that all of us “had to” eat over a pound of bacon. Thankfully, as someone pointed out, the bacon is gluten-free. PHEW! But don’t worry. Ryan fell on his sword and ate about 5 of those pounds himself. We all didn’t have to suffer. KIDDING! We all hope…

To counteract all this bacon, I decided to make something delicious that I had pinned onto my food Pinterest board a while ago:

Baked French Toast Sticks. IT. WAS. DELICIOUS!!!! And easy! Well, the thing I can’t stress enough is checking on it while it’s in the broiler. The first batch I made got a little burned on one side. But I think I can safely say that those babies were pretty high on this list of deliousness for the weekend. VERY high, so said this group:

They were so freaking good. I HIGHLY suggest everyone try them. And thanks about the blog re-do(ish)!! I had the graphics (some of which haven’t been inserted) done by someone, but I’m trying to implement all the .css code myself, so it’s a slow (and sometimes HIDEOUS) project.
